- 1 cup semolina (sooji/rava)

- 1/2 cup mint leaves
- 1/2 cup coriander leaves
- 2-3 green chilies
- 1-inch piece of ginger
- 1 teaspoon roasted cumin powder
- 1 teaspoon black salt
- 1 teaspoon chaat masala
- 1/4 cup tamarind pulp
- 1 tablespoon jaggery or sugar
- 4 cups cold water
Instructions:
1. To make the puris, mix the semolina, all-purpose flour, and a little salt. Add water gradually to form a stiff dough. Cover and let it rest for 20-30 minutes. Divide the dough into small balls and roll out into small discs. Deep fry in hot oil until they puff up and turn golden brown. Drain on paper towels and let them cool.
2. For the pani, blend mint leaves, coriander leaves, green chilies, ginger, roasted cumin powder, black salt, chaat masala, tamarind pulp, jaggery or sugar, and cold water in a blender until smooth. Strain the mixture and chill in the refrigerator.
3. To assemble the pani puri, gently make a small hole in the center of each puri. Fill it with a little mashed potato, boiled chickpeas, chopped onion, tamarind chutney, and green chutney. Sprinkle some chaat masala, sev, and chopped coriander leaves. Dip the filled puri in the chilled pani and enjoy immediately.
Spicy Pani Puri
Ingredients:
For the puris:
- 1 cup semolina (sooji/rava)
- 1/4 cup all-purpose flour
- Water as needed
- Oil for deep frying
- Red chili powder for dusting
For the filling:
- Follow the same ingredients as the classic pani puri
For the spicy pani:
- Follow the same ingredients as the classic pani puri, but increase the quantity of green chilies and add a pinch of red chili powder for extra heat
Instructions:
1. Follow the same instructions as the classic pani puri until step 3.
2. For the spicy pani, follow the same instructions as the classic pani puri, but adjust the spiciness according to your preference.
